You love that unmistakeable burger flavour. You adore cooking outdoors. But you’re not really into meat or fish. You need veggie burgers. There are thousands of recipes online, but here are three we’ve tried, which we think taste absolutely fabulous.
This time we’re featuring Jamie Oliver’s brilliant recipe. Thanks, Jamie, for the inspiration and the photos. Plus we’ve chosen two from the BBC Good Food website – many thanks to them, too. Happy cooking, folks!
Mega veggie burgers from Jamie Oliver
Your ingredients are:
- 350 g firm silken tofu
- 1 large free-range egg
- 75 g wholemeal breadcrumbs
- 2 heaped teaspoons Marmite
- 8 ripe tomatoes
- 1 tablespoon red wine vinegar
- 2 sprigs of fresh basil
- 4 soft wholemeal buns
- 400 g mixed seasonal salad veg, such as cucumber, red cabbage, apples, cress, baby spinach
- olive oil
- 2 sprigs of fresh rosemary
- 50 g Cheddar cheese
- 50g gherkins
And your dressing:
- 4 tablespoons natural yoghurt
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 4 sprigs fresh basil
- ¼ fresh red chilli
The method
- Wrap the tofu in a clean tea towel
- Wring it to remove the excess liquid
- Place the tofu in a bowl
- Add the egg, breadcrumbs and Marmite them ix it well
- Make 4 burgers
- Roughly chop the tomatoes and fry them with a pinch of black pepper, a dash water and the vinegar
- Squash the tomatoes with a potato masher, then cook them cook for 10 to 15 minutes until thick
- Tear the basil leaves and add them in
Make your dressing
- Blend the basil with the other dressing ingredients
- Put the rosemary leaves in four piles in a frying pan with some oil, and put the burgers on top
- Cook them for 3 minutes on each side, until they’re golden
- Melt the cheese on top
- Add the tomato sauce to your buns, then add your burgers and sliced gherkins
Brilliant Falafel burgers from BBC Good Food
The BBC Good Food site is always a treat, packed with oodles of gorgeous veggie options. How about this one, using falafel?
- 400g can chickpeas, rinsed and drained
- 1 small red onion, roughly chopped
- 1 garlic clove, chopped
- handful of flat-leaf parsley or curly parsley
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp harissa paste or chilli powder
- 2 tbsp plain flour
- 2 tbsp sunflower oil
And your method:
- Drain the chickpeas and pat them dry with kitchen paper
- Blend them until they’re quite smooth, along with the onion, garlic, parsley, cumin, coriander, harissa paste, flour and salt
- Shape the mix into 4 burgers
- Heat the sunflower oil and fry the burgers for 3 mins on each side until golden
The BBC’s veggie Indian burger – Spicy!
This one is super-easy, based on a pack of pre-made veggie burgers.
- 2 vegetarian bean burgers
- ¼ red onion
- ¼ cucumber
- ½ large ripe tomato
- ¼ small bunch coriander
- 2 seeded wholemeal burger buns
- 2 tbsp raita
- 2 tbsp mango chutney
- 20g spicy Bombay mix
The method:
- Cook the vegetarian bean burgers following the instructions on the package
- Finely chop the red onion, cucumber, tomato and coriander
- Mix them together in a bowl
- Lightly toast the burger buns
- Add the burgers plus your raita, mango chutney, tomato, onion and cucumber salad and Bombay mix into the buns
